Ingredients
– 1 cup of diced tomatoes
– 1 cup of cooked black beans
– 1 cup of corn kernels
– 1 small onion, chopped
– 2 cloves of garlic, minced
– 1 teaspoon cumin
– 1 teaspoon salt
– 1 tablespoon olive oil
– 1 avocado, diced
– Fresh cilantro for garnish
Method
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and minced garlic to the pan. Cook until the onion becomes soft.
3. Stir in diced tomatoes, black beans, corn, cumin, and salt. Let it cook for about 5 minutes.
4. Remove from heat and top with diced avocado and fresh cilantro.
5. Serve warm as a tasty side dish or main meal.
