Method
1. Start by cooking the quinoa according to package instructions and let it cool.
2. In a large bowl, combine the black beans, corn, bell pepper, avocado, and cilantro.
3. Add the cooled quinoa to the bowl with the veggies and mix well.
4. Squeeze the lime juice over the mixture. Sprinkle cumin, salt, and pepper. Stir everything together.
5. If using, mix in the feta cheese before serving. Enjoy it fresh or chilled.
