Ingredients
– 1 cup of quinoa
– 2 cups of water
– 1 tablespoon of olive oil
– 1 teaspoon of salt
– 1 cup of cherry tomatoes, halved
– 1 cucumber, diced
– 1 bell pepper, chopped
– 1 avocado, diced
– 1/4 cup of fresh cilantro, chopped
– Juice of 1 lime
Method
1. Rinse the quinoa under cold water in a fine mesh strainer.
2. In a medium pot, combine the quinoa, water, olive oil, and salt.
3. Bring the mixture to a boil, then lower the heat to simmer for about 15 minutes, or until the quinoa is fluffy.
4. After the quinoa cools, mix it with the cherry tomatoes, cucumber, bell pepper, avocado, and cilantro in a large bowl.
5. Squeeze lime juice over the salad, stir gently, and serve.
