Ingredients
– 500 g chicken breast, chopped
– 2 cups broccoli florets
– 1 cup carrot, sliced
– 1 cup capsicum, diced
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 teaspoon ginger, grated
– 4 tablespoons soy sauce
– 1 cup cooked rice
– 1 tablespoon sesame seeds
Method
1. Heat olive oil in a large frying pan over medium-high heat.
2. Add garlic and ginger, cooking for about 1 minute until fragrant.
3. Stir in chicken pieces and cook until they are browned and cooked through, which takes around 5-7 minutes.
4. Toss in broccoli, carrots, and capsicum. Stir-fry for another 5 minutes or until vegetables are tender.
5. Pour soy sauce over the mix, then serve it over cooked rice. Sprinkle sesame seeds on top before serving.
