Method
1. Begin by bringing the water to a boil in a medium saucepan.

3. Cook the quinoa for about 15 minutes or until it is fluffy and the water is absorbed.
4. In a large bowl, mix the cooked quinoa, olive oil, diced vegetables, chickpeas, lemon juice, and paprika.
5. Top the dish with sliced avocado and sprinkle chopped parsley before serving.
