Ingredients

– 400 g tempeh, cut into cubes
– 2 tbsp soy sauce
– 1 tbsp olive oil
– 2 cloves garlic, minced
– 1 tsp ginger, grated
– 1 tbsp maple syrup
– 1 tbsp rice vinegar
– 2 cups broccoli florets
– 1 red bell pepper, sliced
– 1 cup cooked rice

Method

1. In a bowl, mix the soy sauce, olive oil, minced garlic, grated ginger, maple syrup, and rice vinegar.
2. Add the cubed tempeh to the bowl and toss to coat it well. Let it marinate for about 15 minutes.
3. Heat a large pan over medium heat. Once hot, add the marinated tempeh and cook until golden brown, about 5-7 minutes.
4. Toss in the broccoli and sliced bell pepper. Stir-fry everything for another 5 minutes until the vegetables are tender.
5. Serve the tempeh and veggies over cooked rice.
