Ingredients
– 12 jumbo pasta shells
– 500 g ground beef
– 1 small onion, diced
– 1 cup taco sauce
– 1 cup shredded cheese
– 1 can black beans, drained and rinsed
– 1 teaspoon garlic powder
– 1 teaspoon cumin
– 1 teaspoon paprika
– Fresh coriander for garnish
Method
1. Preheat the oven to 180°C.
2. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
3. In a pan, cook the ground beef and onion over medium heat until the meat is browned. Stir in taco sauce, black beans, garlic powder, cumin, and paprika. Let it simmer for a few minutes.
4. Fill each pasta shell with the beef mixture and place them in an oven-safe dish. Sprinkle shredded cheese on top.
5. Bake in the oven for about 20 minutes or until the cheese is melted and bubbly. Garnish with fresh coriander before serving.
