Taco Stuffed Pasta Shells: Easy, Delicious Dinner Recipe

Ingredients

– 250 g jumbo pasta shells
– 400 g minced beef
– 1 onion, diced
– 2 cloves garlic, minced
– 400 g taco sauce
– 1 cup grated cheese
– 1 cup corn kernels
– 1 cup black beans, drained and rinsed
– 1 teaspoon ground cumin
– Salt and pepper to taste

Method

1. Preheat the oven to 180°C. Boil the jumbo pasta shells in a large pot of salted water until al dente, usually about 10 minutes. Drain and set aside.
2. In a large frying pan, brown the minced beef over medium heat. Stir in the diced onion and minced garlic. Sauté until the onion becomes soft.
3. Add the taco sauce, corn, black beans, and cumin. Mix well and let it simmer for about 5 minutes. Season with salt and pepper.
4. Carefully fill each pasta shell with the beef mixture. Place the stuffed shells in a baking dish and sprinkle the grated cheese on top.
5. Bake in the oven for 20 minutes or until the cheese is bubbly and golden. Serve warm.
