Ingredients
– 500 g ground beef
– 2 medium sweet potatoes, peeled and diced
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 400 ml canned diced tomatoes
– 250 ml beef broth
– 1 cup corn, frozen or canned
– Salt and pepper, to taste
Method
1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned. Stir as needed to break it into small pieces.
2. Mix in the chopped onion and minced garlic. Cook until the onion becomes transparent.
3. Add the diced sweet potatoes, ground cumin, paprika, salt, and pepper. Stir everything together.
4. Pour in the diced tomatoes and beef broth. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes.
5. Stir in the corn and cook for an additional 5 minutes until everything is heated through.
