Ingredients
– 4 chicken thighs (bone-in, skin-on)
– 2 tablespoons sumac
– 1 teaspoon salt
– 1 tablespoon olive oil
– 2 Meyer lemons (sliced)
– 4 garlic cloves (smashed)
– 1 onion (sliced)
– Fresh parsley (for garnish)
– 1 cup chicken broth
– Black pepper (to taste)
Method
1. Start by preheating the oven to 200°C.
2. Rub the chicken thighs with salt and sumac, making sure they’re well coated.
3. Heat olive oil in a large oven-safe pan over medium heat. Add chicken, skin side down, and cook until it’s golden brown, about 5-7 minutes.
4. Flip the chicken, then add onion, garlic, lemon slices, and broth to the pan. Spice with black pepper.
5. Transfer the pan to the oven and bake for 30 minutes or until chicken is cooked through. Garnish with fresh parsley before serving.
