Sticky Gochujang Tofu with Herbs and Peanuts
Ingredients
400g firm tofu, pressed and diced
2 tablespoons gochujang paste
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon sesame oil
2 teaspoons rice vinegar
2 spring onions, chopped
1 cup fresh herbs (like coriander and mint), chopped
1/2 cup roasted peanuts, crushed
Cooked rice, for serving
Method
1. Start by pressing the tofu to remove excess water. After 15 minutes, cut the tofu into cubes.
2. In a large bowl, mix the gochujang, soy sauce, honey, sesame oil, and rice vinegar together until well combined.
3. Gently add the tofu to the sauce, ensuring each piece is coated. Let it marinate for about 15 minutes.
4. Heat a non-stick skillet over medium heat. Drain any excess marinade from the tofu and fry the pieces until golden brown, about 5-7 minutes.
5. Serve on cooked rice, topped with chopped spring onions, fresh herbs, and crushed peanuts.
