Spinach and Corn Quesadillas Recipe

Ingredients
1 cup fresh spinach, chopped
1 cup corn kernels, fresh or frozen
1 cup shredded cheese
4 large tortillas
1 tablespoon olive oil
1 teaspoon garlic, minced
1 teaspoon cumin
Salt and pepper to taste
Sour cream for serving
Salsa for serving

Method
Heat olive oil in a frying pan over medium heat.
Add garlic and sauté for a minute until fragrant.
Mix in chopped spinach and corn, cooking for about 3-4 minutes.
Sprinkle in cumin, salt, and pepper. Stir until combined.
Place the mixture onto half of each tortilla, add cheese, fold, and cook on both sides until golden brown and cheese is melted.
