Ingredients
– 1 tbsp olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 can (400 ml) diced tomatoes
– 2 cups vegetable broth
– 1 cup cooked rice
– 1 tbsp chipotle paste
– 1 tsp cumin
– 1 cup corn (frozen or canned)
– Salt and pepper to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until it’s soft and translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Pour in the diced tomatoes, vegetable broth, cooked rice, chipotle paste, cumin, and corn.
5. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
