Method
1. Preheat the oven to 200°C.
2. Season the chicken thighs with salt, pepper, cumin, smoked paprika, and oregano.
3. Heat olive oil in a pan over medium heat. Brown the chicken on both sides, about 5 minutes per side.
4. Add minced garlic to the pan and cook for 1 minute, then pour in chicken broth and chipotle sauce.
5. Transfer the pan to the oven and bake for 25 minutes. Garnish with parsley before serving.
