Ingredients
– 600 g chicken breast
– 1 tbsp Cajun seasoning
– 1 tbsp olive oil
– 4 cups mixed salad greens
– 1 cup cherry tomatoes, halved
– 1 avocado, sliced
– 1/2 cup corn kernels
– 1/2 cup black beans, rinsed
– 1/4 cup mayonnaise
– 1-2 tsp chipotle sauce
Method
1. Preheat a frying pan over medium heat. Add olive oil. Cook the chicken, sprinkled with Cajun seasoning, for about 6-7 minutes on each side until fully cooked. Remove from heat and let it rest.
2. While the chicken cools, combine the salad greens, cherry tomatoes, avocado, corn, and black beans in a large bowl. Toss gently to mix.
3. For the dressing, mix mayonnaise and chipotle sauce in a small bowl. Adjust the spiciness by adding more chipotle sauce if desired.
4. Slice the cooked chicken and place it on top of the salad. Drizzle the chipotle mayo dressing over everything.
5. Serve immediately and enjoy a fresh, delicious meal!
