Spicy Bean Rice With Marinara Sauce & Jalapeños Recipe

Ingredients

  • 1 cup rice
  • 400 ml vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 jalapeño, diced
  • 1 teaspoon salt
  • 1 tablespoon fresh coriander, chopped

Method

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, heat olive oil over medium heat. Add the rinsed rice and toast it for about 2 minutes.
  3. Pour vegetable broth into the pot. Add cumin, paprika, and salt. Stir and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes. Once cooked, fluff the rice with a fork.
  5. Mix in black beans, marinara sauce, and diced jalapeño. Cook for another 5 minutes. Garnish with fresh coriander before serving.
