Ingredients
- 1 cup rice
- 400 ml vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1 jalapeño, diced
- 1 teaspoon salt
- 1 tablespoon fresh coriander, chopped
Method
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat. Add the rinsed rice and toast it for about 2 minutes.
- Pour vegetable broth into the pot. Add cumin, paprika, and salt. Stir and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes. Once cooked, fluff the rice with a fork.
- Mix in black beans, marinara sauce, and diced jalapeño. Cook for another 5 minutes. Garnish with fresh coriander before serving.
