Ingredients
– 4 cups all-purpose flour
– 1 1/2 cups warm water
– 1 cup active sourdough starter
– 1/4 cup sugar
– 1 teaspoon salt
– 1/2 cup dried cranberries, chopped
– Zest of 1 orange
– 1 tablespoon baking soda
– 2 tablespoons honey
– Extra flour for dusting
Method
1. Start by mixing the flour, warm water, sourdough starter, sugar, and salt in a large bowl. Knead the dough for about 10 minutes until it’s smooth.
2. Add the chopped cranberries and orange zest to the dough. Continue kneading until everything is evenly mixed in.
3. Place the dough in a greased bowl, cover it with a clean cloth, and let it rise for 4-6 hours or until it doubles in size.
4. Once risen, divide the dough into 8 equal pieces. Shape each piece into a bagel, then let them rest for 20 minutes. Preheat your oven to 220°C (425°F).
5. Bring a large pot of water to a boil. Add the baking soda and honey. Boil each bagel for about 1 minute on each side. Place them on a baking tray and bake for 20 minutes until golden brown.
