Ingredients
– 200 g dried vermicelli noodles
– 1 liter chicken broth
– 300 g cooked chicken, shredded
– 100 g cooked shrimp, peeled and deveined
– 1 cup green beans, chopped
– 1 medium carrot, julienned
– 2 tablespoons soy sauce
– 2 teaspoons sesame oil
– 1 clove garlic, minced
– 1 spring onion, chopped
Method
1. Soak the vermicelli noodles in hot water for about 10 minutes until soft. Drain and set aside.
2. In a large pot, heat the chicken broth over medium heat. Add the garlic and let it cook for 1 minute.
3. Stir in the shredded chicken, shrimp, green beans, and carrot. Cook for 5 minutes or until the vegetables are tender.
4. Mix in the soy sauce and sesame oil. Add the soaked noodles and stir well to combine everything.
5. Garnish with spring onions before serving.
