Ingredients
– 2 cups cornmeal
– 1 cup all-purpose flour
– 1 tablespoon baking powder
– 1 teaspoon salt
– 2 tablespoons sugar
– 2 cups buttermilk
– 2 large eggs
– 1/4 cup vegetable oil
– 1/2 cup sorghum syrup
Method
1. Preheat the oven to 200°C. Grease a baking dish or line it with baking paper.
2. In a large bowl, mix the cornmeal, flour, baking powder, salt, and sugar together until combined.
3. In another bowl, whisk the buttermilk, eggs, and vegetable oil together.
4. Pour the wet ingredients into the dry mix and stir until everything is just combined.
5. Add in the sorghum syrup and pour the batter into the prepared dish. Bake for about 25 to 30 minutes or until golden brown.
