Ingredients
– 2 cups all-purpose flour

Method
1. Preheat your oven to 180°C. Line baking trays with baking paper.
2. In a bowl, mix together the flour, baking soda, baking powder, cinnamon, ginger, and salt.
3. In another bowl, beat the softened butter with brown sugar until smooth. Add the egg and vanilla extract while mixing until combined.
4. Gradually add the dry ingredients to the wet mixture, stirring until everything is blended.
5. Scoop dough onto the prepared trays, leaving space between each one. Bake for 10-12 minutes or until edges look lightly golden.
