2 eggs

1 tablespoon sesame oil

Method
Heat olive oil in a large frying pan over medium heat.
Add mixed vegetables and cook for 3-4 minutes until tender.
Stir in cooked rice and soy sauce, mixing well.
Push rice mixture to one side of the pan, crack the eggs into the empty side, and scramble them.
Combine everything in the pan and season with garlic powder, salt, pepper, and sesame oil. Garnish with spring onions before serving.
