Ingredients
- 1 medium onion, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 500 g lean ground beef
- 1 can (400 g) diced tomatoes
- 1 can (400 g) black beans, rinsed and drained
- 1 small cabbage, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 750 ml beef broth
Method
- Start by cooking the ground beef in a skillet over medium heat until it’s browned. Drain any excess fat.
- Combine the beef, onion, and bell peppers in the slow cooker. Add the diced tomatoes and black beans.
- Mix in the chopped cabbage, cumin, and chili powder. Pour in the beef broth to cover all ingredients.
- Set the slow cooker on low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible.
- Serve hot in bowls, and enjoy your delicious soup! Don’t forget to add your favorite toppings if desired.
