Slow Cooker Cabbage Fiesta Soup: A Hearty And Flavorful Recipe

Ingredients

  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 500 g lean ground beef
  • 1 can (400 g) diced tomatoes
  • 1 can (400 g) black beans, rinsed and drained
  • 1 small cabbage, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 750 ml beef broth

Method

  1. Start by cooking the ground beef in a skillet over medium heat until it’s browned. Drain any excess fat.
  2. Combine the beef, onion, and bell peppers in the slow cooker. Add the diced tomatoes and black beans.
  3. Mix in the chopped cabbage, cumin, and chili powder. Pour in the beef broth to cover all ingredients.
  4. Set the slow cooker on low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible.
  5. Serve hot in bowls, and enjoy your delicious soup! Don’t forget to add your favorite toppings if desired.
