Lamb Stew Recipe
Ingredients
800 g lamb shoulder, cut into 2.5 cm pieces
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, sliced
3 potatoes, diced
900 ml beef broth
2 tsp dried thyme
Salt and pepper, to taste
Method
1. Heat the olive oil in a large pot over medium-high heat.
2. Add lamb pieces and brown them for about 5 minutes, stirring often.
3. Throw in onions and garlic, cooking until the onions are soft, which takes about 3 minutes.
4. Stir in carrots, potatoes, beef broth, and dried thyme. Bring to a boil.
5. Reduce heat, cover the pot, and let it simmer for 1.5 to 2 hours until the meat is tender.
