Method
1. Start by combining the kale, cabbage, grated carrots, apple slices, walnuts, and raisins in a large bowl.
2. In a separate small bowl, mix olive oil, sherry vinegar, thyme, salt, and pepper.
3. Pour the dressing over the salad and toss everything together until well coated.
4. Let the salad sit for about 10 minutes to allow flavors to blend.
