Ingredients
200 g kale, stems removed and leaves shredded
150 g brussels sprouts, thinly sliced
100 g green apple, cored and sliced
1 avocado, sliced
50 g walnuts, roughly chopped
30 ml olive oil
30 ml apple cider vinegar
1 tsp Dijon mustard
1 tsp maple syrup
Salt and pepper to taste
Method
1. In a large bowl, combine the shredded kale and sliced brussels sprouts.
2. Add the green apple, avocado, and walnuts to the bowl.
3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper.
4. Pour the dressing over the salad and toss until everything is well coated.
5. Serve immediately for a fresh and crunchy meal.
