Ingredients

Method
1. Preheat your oven to 200Ā°C (400Ā°F).
2. Toss potatoes, green beans, bell pepper, onion, and garlic in a large bowl with olive oil, thyme, salt, and pepper.
3. Spread the mixture evenly on a baking sheet.
4. Roast in the oven for about 25-30 minutes until everything is tender and golden.
5. Drizzle lemon juice over the veggies before serving.
