Ingredients

– 2 medium courgettes, grated
– 2 large eggs
– 180 ml vegetable oil

– 250 g plain flour

– 1 teaspoon vanilla extract

– Icing sugar for dusting

Method

1. Preheat the oven to 180°C (350°F) and grease a cake tin.
2. In a bowl, mix together the grated courgettes, eggs, vegetable oil, and sugar.
3. Combine the flour, baking powder, salt, and cinnamon in a separate bowl.
4. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
