Ingredients
2 medium zucchinis
450 g sausage meat
1 cup diced onion
2 cloves garlic, minced
1 cup diced bell pepper
1 cup shredded cheese
1 cup marinara sauce
1 tsp Italian seasoning
Salt to taste
Pepper to taste
Method
1. Preheat your oven to 190°C. Slice each zucchini in half lengthwise and scoop out the insides, creating “boats.”
2. Heat a large skillet over medium heat. Add sausage meat, onion, and garlic. Cook until browned, breaking up the sausage as it cooks.
3. Mix in the bell pepper, marinara sauce, Italian seasoning, salt, and pepper. Stir everything together and cook for about 2 more minutes.
4. Spoon the sausage mixture into the zucchini boats, filling them generously. Top each boat with shredded cheese.
5. Place the zucchini boats in a baking dish. Bake for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly.
