Ingredients
400 g firm tofu, drained and pressed
1 cup apple cider
3 tbsp olive oil
3 cloves garlic, minced
2 tbsp fresh rosemary, chopped
1 tsp salt
1 tsp black pepper
1 tbsp maple syrup
1 tbsp apple cider vinegar
2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
Method
Cut the pressed tofu into cubes.
Heat olive oil in a large skillet over medium heat.
Add garlic and rosemary, cooking until fragrant, about 1 minute.
Stir in the tofu cubes, followed by apple cider, salt, pepper, maple syrup, and vinegar. Cook for about 10 minutes, turning occasionally.
Add mixed vegetables and cook for an additional 5-7 minutes, until everything is warmed through.
