Ingredients
– 1 medium butternut squash, peeled and diced
– 2 tablespoons olive oil
– 1 tablespoon brown sugar
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon ground cumin
– 1 teaspoon za’atar spice
– 1 cup plain yogurt
– 1 tablespoon orange juice
– Zest of 1 orange
Method
1. Preheat the oven to 220 degrees Celsius.
2. Toss the diced butternut squash in olive oil, brown sugar, salt, black pepper, and cumin on a baking tray.
3. Roast the squash for about 25 minutes, or until tender and golden.
4. While the squash cooks, mix yogurt, orange juice, za’atar, and orange zest in a bowl.
5. Serve the roasted squash topped with the yogurt mixture.
