Ingredients
- 500 ml fresh rhubarb, chopped
- 150 g sugar
- 1 lime, juiced
- 1 liter soda water
- 250 ml vodka
- Ice cubes
- Lime slices, for garnish
- Fresh mint leaves, for garnish
Method
- Combine the chopped rhubarb and sugar in a saucepan over medium heat.
- Stir occasionally for about 10 minutes until the rhubarb breaks down and turns into a syrup.
- Remove from heat and let cool before adding lime juice.
- In a large pitcher, mix the rhubarb syrup with vodka and soda water.
- Serve over ice and decorate with lime slices and mint leaves.
