Method
- Heat olive oil in a large pan over medium heat.
- Add the garlic and sauté for about 1 minute.
- Stir in the chicken and cook until browned, about 5 to 7 minutes.
- Incorporate the broccoli, bell pepper, coconut milk, curry powder, salt, and pepper. Simmer for 10 minutes.
- Serve the chicken and vegetables over cooked rice.
