Ingredients
– 500 g chicken breast, diced
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 bell pepper, sliced
– 400 g canned diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– 200 ml chicken broth
– 1 cup rice
Method
1. Heat olive oil in a large pan over medium heat.
2. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
3. Stir in the diced chicken breast and cook until browned on all sides.
4. Mix in the bell pepper, canned tomatoes, oregano, paprika, and chicken broth. Bring the mixture to a boil.
5. Stir in the rice. Reduce heat, cover the pan, and simmer for about 20 minutes or until the rice is cooked and fluffy.
