Ingredients

– 400 g canned chickpeas, drained and rinsed
– 1 medium cucumber, diced
– 1 red bell pepper, chopped
– 1/2 red onion, finely chopped
– 1 clove garlic, minced
– 60 ml olive oil
– 15 ml lemon juice
– 1 tsp ground cumin
– 1/2 tsp paprika
– Salt and pepper, to taste

Method

1. Start by draining and rinsing the chickpeas. Place them in a large bowl.
2. Add the diced cucumber, chopped red bell pepper, and red onion to the bowl.
3. Mix in the minced garlic, olive oil, and lemon juice. Stir well to combine all the ingredients.
4. Sprinkle the ground cumin, paprika, salt, and pepper over the mixture. Toss to coat evenly.
5. Serve the salad chilled or at room temperature.
