Ingredients
– 1 ripe pineapple, peeled and chopped
– 1 medium cucumber, peeled and chopped
– 1 lime, juiced
– 2 tablespoons of honey
– 500 ml of cold water
– A handful of mint leaves
– Ice cubes
Method
1. Start by blending the chopped pineapple and cucumber together until smooth.
2. Pour the mixture through a fine sieve into a large jug to remove any pulp.
3. Stir in the fresh lime juice and honey, mixing until well combined.
4. Add the cold water to the jug and give it a good stir.
5. Serve the pineapple cucumber cooler over ice cubes and garnish with mint leaves.
