Orange Parsley Salad with White Balsamic Vinaigrette
Ingredients
2 large oranges
½ cup fresh parsley, chopped
¼ cup red onion, finely sliced
¼ cup walnuts, chopped
¼ cup feta cheese, crumbled
3 tablespoons white balsamic vinegar
3 tablespoons olive oil
1 teaspoon honey
Salt, to taste
Pepper, to taste
Method
1. Start by peeling the oranges and cutting them into bite-sized pieces.
2. Chop the fresh parsley and slice the red onion thinly.
3. Place the orange pieces, parsley, red onion, walnuts, and feta cheese in a large bowl.
4. In a separate small bowl, whisk together the white balsamic vinegar, olive oil, honey, salt, and pepper.
5. Pour the dressing over the salad and gently toss to combine all ingredients.
