Ingredients
– 2 large cucumbers
– 2 teaspoons salt
– 2 teaspoons sugar
– 3 tablespoons rice vinegar
– 1 tablespoon soy sauce
– 1 teaspoon sesame oil
– 1 teaspoon sesame seeds
– 1 small chili pepper (optional)
– 2 green onions
Method
1. Start by slicing the cucumbers into thin rounds. Place them in a large bowl.
2. Add salt to the cucumbers, mixing well. Let this sit for about 15 minutes so the cucumbers soften.
3. While they sit, combine sugar, rice vinegar, soy sauce, and sesame oil in a small bowl. Stir until the sugar dissolves.
4. Rinse the cucumbers under cold water after 15 minutes. Drain well and put them back in the bowl.
5. Pour the dressing over the cucumbers. Toss in sesame seeds, chopped green onions, and sliced chili pepper if using. Mix everything gently.
