Ingredients

Method
1. Start by slicing the fennel bulb and onion thinly. Place these in a large bowl.
2. Peel the oranges, then cut them into segments and add them to the bowl with fennel and onion.
3. Toss in the mixed salad greens, olives, and chopped parsley.
4. In a small bowl, whisk together the olive oil, white vinegar, salt, and pepper. Pour this dressing over the salad.
5. Gently mix everything together and serve immediately.
