Cucumber Mint Soup Recipe
Ingredients
– 2 medium cucumbers, peeled and chopped
– 400 ml vegetable broth
– 1 cup fresh mint leaves, packed
– 1 cup plain yogurt
– 1 tablespoon olive oil
– 1 tablespoon lemon juice
– 1 garlic clove, crushed
– Salt, to taste
– Pepper, to taste
Method
1. Place chopped cucumbers, mint leaves, vegetable broth, yogurt, olive oil, lemon juice, and garlic in a blender.
2. Blend the mixture on high until it becomes smooth and creamy.
3. Taste the soup and add salt and pepper as needed.
4. Pour the soup into a bowl and chill it in the refrigerator for at least one hour.
5. Serve the soup cold, garnishing with mint leaves if desired.
