Ingredients
– 1 cup jasmine rice
– 2 cups water
– 1 tablespoon olive oil
– 1 cucumber, diced
– 1 cup cherry tomatoes, halved
– 1 red onion, finely chopped
– 1 cup corn, canned or frozen
– 1/4 cup fresh parsley, chopped
– Juice of 1 lemon
– Salt and pepper to taste
Method
1. Rinse the rice under cold water until it runs clear.
2. In a pot, bring the water to a boil and add rice. Reduce heat to low, cover, and let it simmer for about 15 minutes or until cooked.
3. Once done, fluff the rice with a fork and let it cool slightly.
4. In a large bowl, combine the rice, cucumber, cherry tomatoes, red onion, corn, and parsley.
5. Drizzle with olive oil, lemon juice, and season with salt and pepper. Toss everything together to mix well.
