Ingredients
– 200g dried noodles
– 2 cups mixed salad greens
– 1 cup sliced red bell pepper
– 1 cup shredded carrots
– 1 cup cucumber, sliced
– 1/3 cup chopped fresh herbs (like cilantro or basil)
– 1/4 cup soy sauce
– 2 tablespoons sesame oil
– 1 tablespoon rice vinegar
– 1 tablespoon honey
Method
1. Cook the noodles according to package instructions. Drain them and rinse under cold water.
2. In a large bowl, combine the salad greens, red bell pepper, carrots, cucumber, and fresh herbs.
3. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, and honey to make the dressing.
4. Toss the cooled noodles with the salad mixture and pour the dressing over everything.
5. Serve immediately or chill in the fridge for a while before enjoying.
