Ingredients
2 blood oranges
2 grapefruit
1 tablespoon olive oil
1 tablespoon honey
¼ teaspoon sea salt
¼ teaspoon black pepper
1 small red onion
2 cups fresh mint leaves
1 cup feta cheese, crumbled
¼ cup walnuts, chopped
Method
1. Carefully peel the blood oranges and grapefruit, removing all the white membrane. Slice the fruit into rounds or wedges and place them in a large bowl.
2. In a small bowl, mix the olive oil, honey, sea salt, and black pepper together until well combined.
3. Slice the red onion very thinly and add it to the bowl with the citrus. Gently toss to combine all the ingredients.
4. Pour the dressing over the salad and toss gently to coat the fruit and onion evenly.
5. Just before serving, sprinkle the fresh mint, crumbled feta cheese, and chopped walnuts on top for added flavor and crunch.
