30 Minute Madras Lentils
Ingredients
1 cup red lentils
1 tablespoon vegetable oil
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 teaspoons curry powder
1 teaspoon ground cumin
400 ml canned diced tomatoes
400 ml vegetable broth
1 teaspoon salt
Method
Heat the vegetable oil in a large pot over medium heat.
Add the diced onion, cooking until it becomes soft.
Stir in garlic and ginger, cooking for about a minute.
Mix in the curry powder and ground cumin, then add the lentils, diced tomatoes, vegetable broth, and salt.
Bring to a boil. Reduce heat and simmer for about 20 minutes until the lentils are tender.
