Ingredients
– 1 cup chopped onion
– 2 cloves garlic, minced
– 1 tablespoon grated ginger
– 1 cup chopped bell pepper
– 2 cups diced tomatoes
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 cup coconut milk
– 2 cups mixed vegetables (fresh or frozen)
– Cooked rice or naan for serving
Method
1. Heat a large pan over medium heat and add the chopped onion. Cook until soft, about 5 minutes.
2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
3. Add the chopped bell pepper and diced tomatoes. Cook for 5 minutes, stirring occasionally.
4. Sprinkle in the cumin and coriander, then pour in the coconut milk. Mix well and let it simmer for 10 minutes.
5. Add the mixed vegetables and continue simmering for another 5 minutes. Serve hot over rice or with naan.
