Quick And Easy Microwave Baby Spinach Recipe For Healthy Meals

Ingredients

– 250 g baby spinach
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– Salt, to taste
– Pepper, to taste
– 30 ml lemon juice
– 50 g feta cheese, crumbled
– 1 tablespoon sesame seeds (optional)
– 1 tablespoon pine nuts (optional)
– 1 tablespoon raisins (optional)

Method

1. Rinse the baby spinach under cold water and shake off excess water.
2. Place the spinach in a microwave-safe bowl and add the olive oil, garlic, salt, and pepper; mix well.
3. Cover the bowl with a microwave-safe lid or plate. Cook on high for about 1 minute until the spinach is wilted.
4. Remove the bowl from the microwave carefully; check if the spinach is tender. Add lemon juice and stir to combine.
5. Top with crumbled feta cheese, sesame seeds, pine nuts, and raisins if using. Serve warm.
