Ingredients
– 400 g canned beans, drained and rinsed
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 celery stalk, diced
– 1 tsp dried oregano
– 1 tsp cumin
– 1.5 L vegetable broth
– Salt and pepper to taste
– 1 cup frozen corn
Method
1. Heat a large pot over medium heat. Add the chopped onion and cook until it becomes soft.
2. Stir in the minced garlic, diced carrot, and diced celery. Cook for 3 to 4 minutes.
3. Add the drained beans, dried oregano, and cumin to the pot. Mix everything together.
4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 10 minutes.
5. Add the frozen corn and season with salt and pepper. Cook for another 5 minutes before serving.
