Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 can (400 g) diced tomatoes
– 2 cans (400 g each) mixed beans, drained and rinsed
– 750 ml vegetable broth
– 1 teaspoon cumin
– 1 teaspoon oregano
– Salt and pepper to taste
– 1 cup corn kernels (fresh or frozen)
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until the onion softens.
3. Stir in the diced tomatoes, mixed beans, vegetable broth, cumin, oregano, salt, and pepper.
4. Bring the soup to a boil, then reduce the heat and simmer for about 10 minutes.
5. Mix in the corn and cook for another 5 minutes before serving.
