Ingredients

– 2 cups of pasta (any shape)
– 2 tablespoons of olive oil
– 2 cloves of garlic, minced
– 1 medium onion, chopped
– 1 cup of cherry tomatoes, halved
– 1 can (400 ml) of chickpeas, drained and rinsed
– 1 teaspoon of dried oregano
– Salt and pepper to taste
– 1 cup of spinach
– ½ cup of grated cheese

Method

1. Start by cooking the pasta according to the package instructions. Drain it and set aside.
2. Heat the olive oil in a large pan over medium heat. Add the minced garlic and chopped onion. Sauté for about 3 minutes until they are soft.
3. Add the halved cherry tomatoes and chickpeas to the pan. Sprinkle in the oregano, then season with salt and pepper. Cook for another 5 minutes.
4. Stir in the cooked pasta and spinach. Mix everything together until the spinach wilts and everything is heated through.
5. Remove from heat and sprinkle the grated cheese on top before serving.
