Practice Self-Compassion This Holiday Season For Inner Peace

Ingredients

– 4 cups of mixed vegetables (like carrots, peas, and corn)

– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1 cup of cooked rice
– 1/2 cup of soy sauce
– 2 green onions, chopped

Method

1. Preheat the oven to 200°C.
2. In a large bowl, combine the mixed vegetables with olive oil, garlic powder, onion powder, dried herbs, salt, and black pepper.
3. Spread the vegetable mixture evenly on a baking tray and roast for about 20 minutes or until tender.
4. After roasting, mix the cooked rice into the vegetables and pour the soy sauce over the top. Stir well to combine.
5. Garnish with chopped green onions before serving.
