Ingredients
– 6 eggs
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon paprika
– Salt, to taste
– Pepper, to taste
– 1 cup spinach, chopped
– 1 cup cherry tomatoes, halved
– Fresh herbs, for garnish
Method
1. Start by heating the olive oil in a large pan over medium heat.
2. Add the garlic powder, onion powder, paprika, salt, and pepper to the oil. Stir for 1-2 minutes until fragrant.
3. Next, toss in the chopped spinach and halved cherry tomatoes. Cook for around 2-3 minutes until the spinach is wilted.
4. Beat the eggs in a bowl until well mixed. Pour the eggs into the pan, swirling gently to spread them evenly.
5. Cook for another 3-5 minutes or until the eggs are set. Garnish with fresh herbs before serving.
